Many innovations emerge of unexpected outcomes when results are better than the original plan.   That is what happened with Allegretto approach to sweeteners. 

Looking for a more natural, less processed sugar alternative, we discovered sweeteners that improve chocolate flavor. They also add a notch up in health and nutrition when compared to commercial chocolates that use refined sugars. 

The Route of Dates

A great pairing of fruits: Cacao & Dates.   We use plain dried dates to sweeten our fine cacao beans. Dates add a mild sweetness with an extra hint of fruits producing a more intense chocolate bar.    Minimally processed (just dried) dates add fiber and minerals and have a lower glycemic index than refined sugar.

The Route of Coconut Sugar

Coming from the sap of the coco palm tree it is a robust sweetener but does not carry a coconut flavor in chocolates. Coconut sugar makes sweet, silky bars with a caramel punch. It is less processed than refined sugar with a lower glycemic index.

Single Origin Fine Cacao

A selection of fine cacao beans from top cacao producer regions provides our unique flavor and bouquet experiences. After studying, tasting, and comparing different chocolates from around the world, Allegretto selection is focused on the Caribbean, Central and South America regions.

After all, Cacao was borne in the tropics of the Americas so you can’t beat that heritage.

Fine chocolate does not need added flavorings, hydrogenated oils, or tons of sugar to mask the acidity of bulk/low quality cacao beans typically used in commercial chocolate.  Allegretto Dark 70% contains only fine cacao and the right amount of sweetener.  Allegretto Milk is processed the same way and we just add high quality plant-based milk.

Bean-to-Bar in Small Batches

As boutique chocolate makers we craft our chocolate bars of 50gr and 15gr in small batches to control quality in every step.  Our fine cacao beans are treated carefully throughout the different production stages: sorting, roasting, grinding and tempering.

Allegretto believes that indulgence can be taken up a notch in health.      Looking for a more natural, less processed sweetener, we discovered sweeteners that improve chocolate flavor (dates and coconut sugar).  Our signature formulations add flavor and nutrition while providing a better alternative to refined sugars used in commercial chocolates.
